III. Muffins / Cupcakes:
x. Basic Mixture Of Muffins – makes 12: 1 3/4 cups self-raising flour sifted and husks returned; 1/2 cup brown sugar; 1 tsp baking powder; 3/4 cup milk; 1 egg lightly beaten; 3 tbsp margarine melted;
Combine flour, sugar and baking powder in a bowl. Stir in milk and egg, then add margarine and mix well. Spoon mixture into 12 lightly greased muffin tins and bake for 20-25 minutes or until cooked when tested with a skewer and golden.

xi. Carrot And Walnut Muffins – makes 12: Stir in 155g / 5 oz carrot, 3 tbsp chopped walnuts and 1/2 tsp ground cinnamon into basic mixture.

xii. Almond And Ginger Muffins – makes 12:
Stir 3 tbsp ground almonds, 2 tbsp finely chopped glace ginger and 2 tso grated orange rind into basic mixture.

xiii. Cranberry Muffins – makes 12
Stir 170g / 5 1/2 oz cranberry sauce into basic mixture.

xiv. Blueberry Muffins – makes 12:Drain 440 g / 14 oz canned blueberries and stir into basic mixture. Sprinkle each muffin with a little coffee sugar before cooking.

xv. Banana And Pecan Muffins – makes 12: Mash 3 ripe bananas and stir into basic mixture with 3 tbsp chopped pecan nuts. Combine 3 tbsp brown sugar, 3 tbsp finely chopped pecans and 1 tsp ground cinnamon and sprinkle over muffins before cooking.
