II. Healthy Finger Foods:
i. Tropical Freezers – serves 50: 440g / 14 oz canned crushed pineapple; 2 mangoes chopped; 1 banana sliced; 1 tbsp chopped fresh mint;
Place pineapple, mangoes, banana and mint in a food processor or blender and process until smooth. Pour mixture into ice cube trays and freeze until firm. Turn fruit freezers out into cups. Eat with fingers.

ii. Strawberry And Watermelon Freezers – serves 50: 250g / 8 oz strawberries; 1/4 watermelon, seeds removed;
Place everything in a processor and process till smooth. Pour mixture in ice trays and freeze and turn out into cups and serve.

iii. Melon Marbles – makes 12: 1/2 rock melon (cantaloupe) seeded; 1/2 honeydew melon, seeded; 1/4 watermelon seeded; 2 tsp lemon juice; 1 tsp honey; pulp of 2 passion fruit;
Using a melon baller make balls from rock melon (cantaloupe), honeydew melon and watermelon. Combine lemon juice, honey and passion fruit pulp in a bowl. Add melon balls and toss to coat. Thread melon balls, alternately, onto 12 wooden skewers. Chill.

iv. Jaffles In A Jiffy – makes 1 sandwich: 2 slices wholemeal bread; 1 tsp margarine/butter;
For The Filling: 1 egg pan-cooked or 1 slice cheddar cheese or 3 tbsp baked beans or 1 slice ham;
Lightly spread one side of bread with margarine. Place filling of your choice on unspread side of one slice of bread, top with another slice and cook in a jaffle iron or sandwich maker for 2-3 minutes, or until golden.

v.Tasty Sticks – makes 25: 4 potatoes cooked and mashed; 1 tbsp milk powder; 1 tbsp chopped fresh parsley; pinch of cayenne pepper; 15g / 1/2 oz margarine melted; 3 tbsp grated parmesan cheese;
Combine mashed potatoes with milk powder, parsley, cayenne pepper and margarine. Spoon mixture into a piping bag fitted with a large star nozzle, and pipe 3 in lengths of mixture onto a greased and lined baking tray. Sprinkle with parmesan cheese and bake at 350 degrees F / 180 degrees C for 20 minutes or until golden.

vi. Wholemeal Pikelets – makes 12: 1/4 cup milk; 2 tsp vegetable oil; 1 tsp lemon juice; 1 egg; 2 tbsp honey; 1 cup wholemeal self-raising flour, sifted with 1 tsp ground cinnamon and husks returned; 2 tsp margarine;
Strawberry Spread: 3 tbsp ricotta cheese; 1 tbsp natural yogurt; 2 tsp honey; 250 g / 8 oz strawberries chopped.
To make pikelets, place milk, oil, lemon juice, egg and honey in a food processor or blender and process to combine. Add flour mixture and process until smooth. Melt margarine in a nonstick frying pan. Drop tbsps of mixture into pan and cook over a medium heat until golden on both sides. To make spread, place rocotta cheese, yogurt and honey in a food processor or blender and process until smooth. Transfer ricotta mixture to a bowl and fold in strawberries. Cover and chill until ready to use. Top pikelets with spread and serve. These pikelets are also delicious served plain.

vii. Mini Quiches – makes 6: 314g / 10 oz prepared wholemeal shortcrust pastry; 1 onion finely chopped; 220g / 7 oz canned salmon drained and flaked; 2 eggs lightly beaten; 3/4 cup milk; 1/4 tsp grated nutmeg; 2 tsp chopped fresh dill; freshly groung black pepper; 60g / 2 oz grated cheddar cheese; 1 tbsp snipped fresh chives;
Line six 7.5 cm / 3 in flan tins with pastry. Cook onion in a non-stick frying pan over a medium heat for 4-5 minutes or until soft. Divide onion and salmon between flans cases. Combine eggs, milk, nutmeg, dill and black pepper to taste. Pour into flans, sprinkle with cheese and chives and bake at 200 degrees C / 400 degrees F, for 20 minutes or until filling is firm.

viii. Spinach And Ham Quiches – makes 6: 314g / 10 oz prepared wholemeal shortcrust pastry; 100g / 3 1/2 oz chopped spinach; 100g / 3 1/2 ham chopped; 3 tbsp finely chopped red pepper; 2 eggs lightly beaten; 60 g grated cheddar cheese; 1 tbsp fresh chives;
Line six 7.5 cm / 3 in flan cases with pastry. Boil, steam or microwave chopped spinach until tender. Divide between flan cases. Divide ham and red pepper between flan cases, then pour over egg mixture, top with cheese and chives and bake for 20 minutes.
