Spa Party Food:

III. Muffins / Cupcakes:
v. Orangy Carrot Cupcakes – makes 12: 85g butter softened; 85g castor sugar; 2 eggs beaten; 85g self-raising flour; zest of 1 medium orange; 1 medium carrot finely grated; 50g sultanas;
Heat oven to 180 degrees C and line a 12-hole bun tin with paper cases. Beat together the butter, sugar, eggs, flour and orange zest to a smooth mix, then stir in the carrot and sultanas. Divide the batter between the paper cases. Bake for 10-12 minutes or until golden and springy to the touch.

vi. Simple Muffins – makes 6: 2 cups of white flour; 1 cup of warm water; 1 cup of wheat flour; 2 tablespoons of polyunsaturated vegetable oil; 1 tablespoon of dry yeast; 1 teaspoon of salt or to taste; Cornmeal.
Mix the warm water, vegetable oil, yeast and salt in a bowl. Fold in gradually the white flour, followed by the wheat flour and mix thoroughly. Smear oil on the surface of the dough and allow it to rise for 30-40 minutes. Knead the dough until soft; then cut into six pieces and roll each piece in cornmeal. Form each ball into muffins, four inches in diameter and place on a cookie sheet and bake at 350 degrees F / 175 degree C for 15 minutes. The choice of toppings are given below.

vii. Peaches And Cream Muffins – serves 2:
1/3 cup cottage cheese; pulp of 1 passion fruit; 2 muffins (recipe above) halved and toasted; 2 peaches stoned and sliced;
Combine cottage cheese and passion fruit pulp. Spread mixture over muffins, top with peach slices and serve.

viii. Three T Muffins – serves 2
1 tomato sliced; 2 muffins (simple muffins recipe given above)halved and toasted; 2 slices cooked turkey breast; 3 tbsp grated cheddar cheese; freshly ground black pepper;
Place tomato slices on muffins. Top with turkey, cheese and black pepper to taste. Place under a preheated hot grill and cook until heated through.

ix. Fruit And Nut Muffins – serves 2:1/3 cup ricotta cheese; 1 tbsp currants; 1 tbsp chopped raisins; 1 tsp grated orange rind; 2 muffins halved and toasted; 2 tbsp chopped pecans;
Combine ricotta cheese, currants, raisins and orange rind. Spread mixture over muffins, sprinkle with pecans and serve.
